blogs the way I originally planned to - I wanted to post live audio
cooking blogs on my page but found out I can only post audio which has
already been recorded so I think what I will do is record the blog
'live' whilst I cook it, and then post it on the page. I will also do
written ones with pictures like this one but I also want to try and
create some stop-motion animation ones to put on here (if I can!!)
Anywho tonight I had a real craving for CAKE, banana cake to be exact-
a-mondo, but I wanted to make cupcakey/muffin ones so that I could
take them into wrk tomorrow. So I had a recipe for banana bread but it
used self-raising flour and I only had plain but I had baking powder
and bicarbonate of soda so I found a recipe which uses those instead
and away we went. However, I think I had the wrong cases because they
turned out quite small and flat so they have now been renamed: Wee
Boonanny Cakes! (sorry if that is a rude word - I once said that to a
lady I knew and she looked at me in horror and told me that where she
came from it meant a lady's 'special place' - but that's just what we
call bananas at home!)
So anyway this is how I made them, I pre-heated the oven to about 180
degrees and placed paper cases in to a 12-hole muffin tray. I then
mixed 200g plain flour, 1/2 teaspoon baking powder, 1 teaspoon
bicarbonate of soda and 1/2 teaspoon salt in a large mixing bowl with
a fork to break up any lumps. (u could also just sieve it all, but I
don't have one.) Then I mashed 3 very ripe bananas in a seperate bowl
and added 150g caster sugar and 1 egg before melting 75g of butter in
the microwave and pouring that in too. I then mixed this all
thoroughly and poured it into the dry ingredients and folded it slowly
until just combined. (I usually go stirring crazy with cake mix but
it's not good to for some cakes because then they don't rise properly
- but then mine didn't hugely but they still taste great all the same!!)
I then poured about a dessert spoon of mixture into each case in the
muffin tray until all the mixture was used up and put them in the
middle of the oven for about 25 mins but if your oven has it's own
opinion on what temps and cooking times are - like mine - then just
keep an eye on them through the oven door especially after 20 mins so
the tops don't burn. They should turn out golden brown and if you put
a knife through the middle of one it should come out clean!
Whilst they were baking I also made up a little buttercream to go on
top of half of them but I don't tend to use measurements when I do
icing, mainly because it's really up to you how much you make because
of the type of cake you have - also it's very fun to just chuck things
in until they look or taste right, espeially with icing sugar which
just goes everywhere when u shake it out of the bag!! So I just used a
little knob of melted butter and added enough icing sugar to get the
right thickness before adding a little vanilla esscence and a dash of
milk, mixing as I went until I got the result I desired - thin enough
to spread on top of the cakes but not too runny! Voilà!
